I've never been quite clear on what the NWN manual means by a skill "requiring training" vs. a skill that doesn't.

Training required skills are the ones that require you to put a point into them before they become accessible in game.
Ones that don't your attribute modifiers will apply to them and let you use them to a certain(but obviously limited) extent.

Am I right in thinking that you must have at least 1 rank in a skill to be able to use it, even though you could have bonuses from items. For example, even with Lockpicks +10 I could not open locks if I had 0 ranks in that skill? I always thought that was how it worked but never bothered to try it. Maybe Lockpicks is a special case - how about Animal Empathy - I've seen several items that give +s to Animal Empathy, but could I use the skill if I had the item, but had no ranks?

Im pretty sure my character was not able to find some lockpicks he found that had a + to them, and my character has a 0 lockpick skill. Cant test the animal empathy one for you tho..
With every breathe we slip closer to death.. does that mean an asmatic is immortal?

Animal Empathy, Pick Lock, Disable Trap, Lay Trap, Tumble, Spellcraft. That sort of things. All of those are kind of specialist skills, which the average joe wouldn't know. Don't remember the definitive list, but you can check it yourself. Look at your character sheet. If you haven't put points in a skill and it doesn't show on the list, it's one of those skills.

You can't use any skill that needs training if you do not have at least one pt in it, regardless what kind of bonusitems you might have.

What about skills that you get an ability bonus for? For instance, if you have 12 or higher dex, you automatically get a point in tumble, right? Or do you still need to put points in it?

Tumble requires training. I suggest you check your manual for further skills, we could be here all day otherwise.

You receive a 1 point bonus to tumble, only after you've put one point to it.
So with a twelve dex it's
0 points -> 0
1 points -> 2

the same goes for crafting skills right?
I mean, you cant change a weapon or armor until you have some crafting skills in it.

Bioware default crafting is disabled on Avlis currently. We've got our own fancy version.
But I believe that they don't require training. If it shows up on your skill list on your character sheet, it generally means that its available to you.

If you just click on a skill in your character screen, it pops up the information in the top window and will say "Requires Training: " Yes or No.
