Dairy-free/sugar-free chocolate pudding.

I get paid to cook, I adore sugar, and I do a dessert special every week, so hear me out on this one. This tastes a LOT like a thick cooked chocolate pudding but takes less than 5 minutes to make, AND it satisfies my other half's raging sweet tooth that she shouldn't feed.

2 avocados (nice and green, not the ones you left on the counter the extra 5 minutes and are now brown mush)

1/2 cup coconut milk (nutmilk of your choice, you can do heavy cream here too if you want)

1/4 cup monkfruit (or sugar alternative of your choice... date syrup or maple syrup work too)

1/3 cup cocoa powder
1 teaspoon vanilla extract (the real stuff is so much better than imitation)
a pinch of salt (like a scant 1/4 teaspoon pinch)

Put the avocados in a food processor and zap them till they are smooth, and then add the rest of the ingredients and blend until well mixed. Taste for sweet and adjust to taste.

You can also use a hand mixer if you don't have a food processor.

Worlds easiest gluten free peanut butter cookies!

1 cup of peanut butter (not crunchy)
1 egg
1 cup of sugar

Preheat to 350. Roll into balls, crisscross pattern with a fork, and bake for 8 to 9 minutes. (I am at higher altitude so watch your first batch).

Voila. Done.
Black Bean Brownies


1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil or applesauce
¼ cup cocoa powder
1 pinch salt
1 teaspoon of vanilla extract
¾ cup white sugar

(you can add ½ cup milk chocolate chips if you want on top)


Preheat oven to 350 . Lightly grease 8x8 square baking dish.

Combine the black beans, eggs, oil or applesauce, cocoa powder, salt, vanilla extract, and sugar in a blender or mixer until smooth. Pour into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture if you decided to use them.

Bake in the preheated oven until the top is dry and the edges pull away from sides, about 30 minutes.

And the gluten-free peanut butter cookies are even low-FODMAP. Unfortunately, the other recipes are not.
Then you must reconcile yourself to the fact that something is always hurt by any change. If you do this, you will not be hurt yourself.

Reasonably healthy Cinnamon buns

mix
1/4 cup unsalted butter
2 1/4 cups of 1/2 white 1/2 brown flour (best for bread)
1 tablespoons of truvia (sugar substitute)
1 teaspoon cinnamon
1/2 teaspoon Cardamom
2 tablespoons of coconut sugar, (or splenda brown sugar or regular brown sugar)
(yeast 2 teaspoons 1/2 cup warm water (110F) 1 teaspoon honey)
1/2 teaspoon salt.

For the filling
1/4- 1/2 cup soft unsalted butter
1/4 cup soft light brown sugar (coconut sugar or splenda sugar reduced brown sugar)
1 Tablespoon cinnamon

Method
start your yeast
let rise in a bowl for 5 mins

take butter flour cinnamon and cardamon brown sugar
for the mix and make a crumble.

Add the risen yeast mixture and make a dough
Use a mixer with dough hook or just by hand.
Knead a bit and set aside with a dish towel in a warm place to rise 30 - 40 mins (bit of olive oil coating the bowl)

roll out a rectangle (about 1/4 inch thick)
Add butter cinnamon brown sugar
roll from the bottom up till you have a tube.

Cut into sections fit in the pan and bake at 350F
for 20 - 30 mins

I've used coconut oil firmed instead of butter if you are adventuresome.. it's rather tasty.
