1. What for are there guilds, orders or other guild like things? What do these guilds and orders do? Do DM create quests for them? How can one join a guild and what will he gain from being in a guild?
2. What for are there private discussian forums? How can one gain acces to these forums?

I also want to say that Avlis looks very fun and quality made. Cant wait until i can play on Avlis.

1. Guilds are there for characters that share something in character. This can be a religion, a profession or a general philisophy or anything else really. In a world as large and dangerous as Avlis, where politics and/or monsters can kill your ass in the blink of an eye, it never hurts to have some friends that have your back.
There are guidelines on how to start a guild on Avlis in this forum: here.

2. Private discussion forums are available for all groups and guilds that need a place to discuss their internal business. This includes all the guilds that are named under 1, but there are also some class-specific private discussion boards.
For the class specific boards the only requirement is that you have an interest in the class and preferably play or plan to play one yourself. You only need to subscribe and you'll be added. For subscribing, use the "groups" link under the banner on the top of this page.
For the private discussion boards for the guilds and orders you'll often find that you cannot subscribe through the boards. Most orders and guilds require an in-game developed membership, which means that your character will have to find out in character about the existence of this order and then find some members and prove him- or herself willing and worthy of joining. How difficult these steps are differs quite a lot from one guild to the next.
So much fun,
yet so little time to enjoy it.
