And what falls into each category?

Goblinoids - Goblins, Orcs, Giant Kin?

Humanoids - Bugbears, Kobolds etc?

Or am I completely off the mark?

goblinoids: goblins, orcs, bugbears, hobgoblins
giantkin: ogres, trolls, ettins, giants
"humaniods": ? not sure its really defined, anything with a general human form, i.e. 1 head, 2 legs, 2 arms ;) so it covers everything including things like minators? (they're usually classified as "monstrous humanoids" though I think)

Bugbears are related to Orcs, so they would fall into Goblinoids, I would think.

Goblinoids - Goblins, Orcs, Bugbears
Giant-kin - Giants, Ogres, Trolls
Reptiles - Lizardmen, Kobolds
Humanoids - Humans, Elves, Dwarves, Gnomes, Halflings, Drangonari, Nymphs, etc.

At least that's how I would rank them.

Edit: Thanks for the info, Dirk... I was going to originally list Trolls as Giant-kin, but I wasn't sure, and I figured the humanoid group was there for some reason... personally I just thought Humans, Elves, etc were the only humanoids.

Trolls are definietly giantkin (i get my +4 to AC vs them), bugbears are definitely goblinoids (I get +1 to hit vs them). Some of the fun things you get having a gnome PC ;)

Dirk's list looks good, but I think you can also pick out what they are by checking the toolset (at least, that shows their classification by NWN rules regarding ranger favored enemies and such). I don't think "humanoid" is a classification in NWN. Now DnD might be a somewhat different set of classifications.
